Subject says it all...have a 14 ft John boat I power from the stern with a 30lb minn Kota troller. Fish with 2, sometimes 3 people. Try to fish all day, when I can, and can do so on 1 lead cell marine battery.
Tired of hauling the damn thing back and forth to charge though...and thinking about lithium. Honestly, it’s tough to decipher what size, etc. I would need...not a kayak, but don’t need enough for an 18 ft bass boat either.

can anyone weigh in to help me with an “economical” (yes, we can all laugh) choice for a lithium ion battery to serve my purpose?

I tote lead batts almost every weekend, so I feel your pain. Economically, with Li batts costing in the thousands, you might consider a gasoline outboard. More BTU’s in a teaspoon of gasoline than a 100 amp-hour batt.

Li batt will shut off without warning on low volts, so I would want a back-up, perhaps a charged lead-acid batt that you leave on-board.
