Grilled Crappie filets

Filet your crappie (or any other firm white meat fish) - I prefer to filet them boneless. Mix the juice from 3 large limes, 1/2 cup olive oil, 1/2 cup honey, 1 tsp chipotle powder and 1/2 tsp. garlic in a mixing bowl to make a marinade. Arrange the filets in a zip lock bag and cover with the marinade. Seal and allow them to marinate for about 30 minutes. Light your grill and lightly oil the grates (or use a fish basket to keep them from sticking). Grill the filets under tender and flaky, about 15 minutes total with off-set heat. I served these over a bed of broccoli cheese rice with lime wedges. These also make great fish tacos. Keep your lines tight, be safe and have a blessed day.
