    Redfish a la Meuniere

    I had this last night and it was fantastic. The picture does not do it justice. It's a simple saute of redfish with butter, parsley, lemon and capers. The sauce is made by browning the butter slightly. Very easy to make and it will impress. Probably don't need to cover the whole plate in butter as I did. Just a little over the fish would be sufficient. However, if I'd made some rice and placed the fish over the rice before pouring all the sauce over....well then that's what I'm talkin about!

    I had mine with some romaine and calamatas tossed in a vinaigrette and a few glasses of Macon Villages.

    Flounder or sole meuniere is one of my favorite dishes ever, thanks for the recipe.

    Noticed that recipe lacked capers. I use the Julia Childs recipe which is very similar.
