Cheaters seafood bisque - YUM!
It was one of those weeks where I didn't go shopping and had to make do with what I had on hand. Turned out to be a good thing because I ended up with the best seafood bisque (soup, stew) ever.
In the freezer I had 1lb of frozen raw shrimp and 2lb of fish fillets. In the pantry I had 1 can of minced clams, 1 can of Campbell's Creamy Potato w/Roasted Garlic Soup, 1 can of Campbell's New England Clam Chowder, and 1 large can of crushed tomatoes. In the fridge, I had 1 cup of milk and 1 cup of chicken stock. I also had some leftover cooked home-fries from breakfast (potato & onion) chopped very small. I also had Chesapeake Bay Seasoning from Penzey's.
In a big pot, I threw together the two Campbell's soups, the leftover home-fries, minced clams, crushed tomatoes, milk, chicken stock, and then added 2 tsp of Penzey's Chesapeake Bay Seasoning. I heated this until it was steaming heartily but not boiling. At that point, I added the thawed & peeled shrimp and the thawed fish fillets cut into 1"x2" pieces. I cooked this for 10 minutes, stirring every few minutes, but not letting it actually boil (which would curdle the milk), keeping it just to where it was steaming quite a bit.
